Established twenty years ago by Dominque Hauvette, the vineyard is positioned on the lower slopes of the Alpilles where the soil drains naturally. This together with the stony surface and North facing orientation of the vines ensure that the grapes have every chance to reach full maturity, which accounts for the deep, complex and aromatic flavors of the wines.
The Vineyard.
The vines are cultivated organically and the grapes are handpicked. A cluster thinning and strict control of the foliage ensures optimal ripeness and a healthy harvest. The winemaking is traditional: no artificial yeasts, acids, enzymes or sugars are added.
